Starting the Onam Recipes - Pumpkin Payasam


First one is a sweet. A Payasam/Kheer/Pudding

Ingredients :

Red (Ripe)Pumpkin
1 Kg.
Jaggery
1 Kg.
Grated Coconut
3 Nos.
Cardamom Powder
½ Tea spoon
Cashew Nuts
50 g.
Raisins
50 g.
Ghee
50 g.

Method :

-          Remove the skin and seeds from the pumpkin.
-          Cut and make small pieces and cook well in a pressure cooker.
-          Boil and make a jaggery syrup in ½ liter water.
-          Add 1 glass warm water to the grated coconut and extract
the first milk, repeat the process to get the second milk and third milk.
-          Add the jaggery syrup and ½ portion of ghee to the cooked pumpkin and cook
and make to a thick/semi solid consistency.
-          Add the third milk. When it boils, add the second milk.
-          When it start boiling again, add the first milk and remove from the stove
immediately.
-          Fry the cashew nuts and raisins in the balance ghee and add to the payasam.
