Ingredients to make DOSA :
Boiled Rice 1 Kg.
Urud Dal 1/4 Kg.
Fenugreek Seeds 10 Gr.
Salt To taste

Method :
- Soak rice for 4-5 hours, urud dal & fenugreek seeds for 1 hour.
- Grind both separately to a fine batter and make to a pouring consistency.
- Add salt.
- Allow to ferment for few hours (minimum 8)depending on outside temperature. (or use Home Made & Ready to use Idly Dosa batter )
- Prepare small dosa on a hot tava (little bigger size than an Uthappam) using a ladle of batter.
- Pour a spoon of oil on both sides and make around 30 smooth dosas.
Onion 1 Big or
Shallots 1 Cup
Red Chillies 6-8 Nos.(or as required)
Salt As required
Coconut Oil 1 Table Spoon
Mustard Seeds 1 Tea Spoon
Curry Leaves 1 Spring/Pinnate
Method - 1:
- Clean and cut the onion or shallots.
- Grind along with red chilli and salt, to a fine paste.
- Pour coconut oil and use.
- Or season with mustard seeds and curry leaves.
- On a tava, add 1 tea spoon oil, add sliced onion or shallots, red chillies and saute for 2-3 minutes.
- Allow it to cool.
- Add Salt
- Proceed as for the 1st Method.

Chana Dal 2 Table spoon
Red Chilli 10 - 12 Nos. (or as required)
Black Pepper 2 Tea spoon
Asafoetida 1 Tea spoon
Cumin Seeds 1 Tea spoon
Sesame Seeds 1 Tea spoon
Salt To taste
Method :
- Dry roast red chillies, till crispy. Add rice, chana dal and fry.
- Add pepper, toor dal, urud dal and stir continuously and cook in a slow flame till they got golden brown.
- Add asafoetida, cumin seeds, sesame seeds and salt.
- Mix well and remove from fire, but continue stir.
- Allow to cool.
- Grind to make a fine or little coarse powder.
- Keep it in an air tight bottle or box.
How to use : With Idly or Dosa, take a spoon of podi in a plate, dig a well at the center, add sesame oil, mix well and use.
