Varutharacha Masala Curry (Fried Masala Vegetable Curry)

Another curry, easy to make, with less ingredients .......

We can use this curry for breakfast/dinner along with Idly, Dosa, Chappathi, Aapam, Puttu etc. or for lunch with plain basmati rice.

Here, we are presenting with Idly (use our ready to use Idly / Dosa Batter) as a Healthy Breakfast.

Ingredients :

1.
Potato                    ½  Kg.
Onion                     2 Nos.
Green Chilli            4 Nos.
Ginger                   1 Medium pc.
Garlic                    4-5 pods.

2.
Coconut Oil            2 Table Spoon

3.
Coconut                 ½ Cup
Red Chilli               8 – 10 Nos.
Coriander Seeds     30  Gr.
Onion or
Shallots                  ½ or 10 Nos.
Curry Leaves          1 Spring       
Garam Masala         2 Tea Spoon

4.
Coconut Oil            2 Table Spoon
Mustard                  2 Tea Spoon
Salt                       As required
Curry Leaves          As required

Method :

-          Remove the skin and cut the potatoes to 1” cubes.
-          Thinly cut the onion, length wise.
-          Slit the green chillies.
-          Chop the ginger and garlic.
-          Combine, all the above ingredients, add water and cook.
-          In a pan, heat coconut oil, add the set 3 ingredients and
 fry until it becomes golden brown.  Let it cool and grind
 and make to a smooth paste.
-          Add the ground masala to the cooked vegetables. Add salt.
-          Cook in a low flame, until the curry becomes thick.
-          Season the curry with mustard seeds and curry leaves.
