Moong Dal Fenugreek Dosa

In our Healthy Breakfast Series, today we are presenting a dosa, with sprouted moong and fenugreek.  (Benefits of Sprouts)

Ingredients :

Moong dal – sprouted
½ cup
Fenugreek seeds – sprouted
4 tea spoon
Cumin seeds
1 tea spoon
Chopped ginger
1 tea spoon
Green chilly
1 no.
Curry leaves
2 pinnates


Method :

-         Grind all ingredients together. Add sufficient salt.
-         Make the dosa as usual.

-         Use along with coconut/onion chutney.

Easy Breakfast ! OATS UPMA

Upma or Uppuma or Uppittu is a common South Indian breakfast dish, cooked as a thick porridge from dry roasted semolina. Uppumavu (derived from uppu mavu, meaning salted flour) Various seasonings and/or vegetables are often added during the cooking, depending on individual preferences.

Upma is usually made with Semolina (called Rava or Suji in India) or Wheat Rava (broken wheat). There are many ways Upma is prepared; indeed, every upma cook usually will incorporate variations in flavour when making Upma. This variation is obtained by varying or emphasising particular spices. Here, we are going to make with another healthy ingredient.  OAT. 

A steaming bowl of fresh cooked oatmeal is the perfect way to start off your day, especially if you are trying to prevent or are currently dealing with heart disease or diabetes.

So, we can find the ingredients as well as the way to make the easy, healthy, tasty and delicious breakfast.

Ingredients :

Oat
1 Cup
Onion
1 Big
Ginger
1 small piece
Green Chili
3 Nos.
Tomato
1 Medium
Cooking Oil
2 Table Spoon
Urud Dal
1 Table Spoon
Mustard Seeds
1 Tea Spoon
Turmeric Powder
½ Tea Spoon
Coriander Leaf
Little
Curry Leaf
1 Spring
Salt
To taste




Method :

v  Dry roast the oats in a pan, keep aside.
v  Finely chop onion, tomato, ginger and green chili.
v  In a pan, heat oil, add urud dal.  When it becomes golden brown, add the mustard seeds.  When the spluttering stops, add the chopped ingredients.
v  Saute well. Then add the turmeric powder and salt.
v  Add ¾ cup of water and bring to boil.
v  Simmer the fire and then add the oats.
v  Mix well and cook until the oats cook well.
v  Close the fire and add curry leaves and chopped coriander leaves.
v  Serve hot.

An Easy Idli without Rice and Dal !

Idli is savory cake of South India that is most popular throughout the southern part of India including Tamilnadu, Pondicherry, Kerala, Andhrapradesh and neighbouring countries like Srilanka. The cakes are usually two to three inches in diameter and are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body. (wikipedia)


Normally, we'll make the idli with Rice & Urud Dal batter.  But, today, here we are going to present an easy Idli without rice and dal, with very less ingredients and time. 

More useful for the bachelors as well as for the working women.

Then why you are wasting time ?  Try now itself.  You can learn a new recipe as well as have a nice breakfast or dinner.


Ingredients :

Rava (Semolina)
1 Cup
Fresh Laban/Buttermilk
1 Cup
Salt
As required

Method :

-         Mix laban/buttermilk with rava and keep for ½ an hour.
-         Afterwards, use the idly maker to make the idly as usual.
-         Use with coconut chutney, coriander leaf chutney or Podi

For the Diabetic patients :  Replace the Rava/Semolina with Wheat Rava.  
                                         Use fine rava and the procedure is same.

Varutharacha Masala Curry (Fried Masala Vegetable Curry)

Another curry, easy to make, with less ingredients .......

We can use this curry for breakfast/dinner along with Idly, Dosa, Chappathi, Aapam, Puttu etc. or for lunch with plain basmati rice.

Here, we are presenting with Idly (use our ready to use Idly / Dosa Batter) as a Healthy Breakfast.

Ingredients :

1.
Potato                    ½  Kg.
Onion                     2 Nos.
Green Chilli            4 Nos.
Ginger                   1 Medium pc.
Garlic                    4-5 pods.

2.
Coconut Oil            2 Table Spoon

3.
Coconut                 ½ Cup
Red Chilli               8 – 10 Nos.
Coriander Seeds     30  Gr.
Onion or
Shallots                  ½ or 10 Nos.
Curry Leaves          1 Spring       
Garam Masala         2 Tea Spoon

4.
Coconut Oil            2 Table Spoon
Mustard                  2 Tea Spoon
Salt                       As required
Curry Leaves          As required

Method :

-          Remove the skin and cut the potatoes to 1” cubes.
-          Thinly cut the onion, length wise.
-          Slit the green chillies.
-          Chop the ginger and garlic.
-          Combine, all the above ingredients, add water and cook.
-          In a pan, heat coconut oil, add the set 3 ingredients and
 fry until it becomes golden brown.  Let it cool and grind
 and make to a smooth paste.
-          Add the ground masala to the cooked vegetables. Add salt.
-          Cook in a low flame, until the curry becomes thick.
-          Season the curry with mustard seeds and curry leaves.

'Kutty' Dosa with Chammanthi and Podi

Ingredients to make DOSA :

Boiled Rice               1 Kg.
Urud Dal                   1/4 Kg.
Fenugreek  Seeds      10 Gr.
Salt                           To taste

Method :
  • Soak rice for 4-5 hours, urud dal & fenugreek seeds for 1 hour.
  • Grind both separately to a fine batter and make to a pouring consistency.
  • Add salt.
  • Allow to ferment for few hours (minimum 8)depending on outside temperature. (or use Home Made & Ready to use Idly Dosa batter )
  • Prepare small dosa on a hot tava (little bigger size than an Uthappam) using a ladle of batter.
  • Pour a spoon of oil on both sides and make around 30 smooth dosas. 

Ingredients to make CHAMMANTHI (A RED CHUTNEY) :

Onion                      1 Big or
Shallots                   1 Cup
Red Chillies              6-8 Nos.(or as required)
Salt                          As required
Coconut Oil              1 Table Spoon
Mustard Seeds          1 Tea Spoon
Curry Leaves            1 Spring/Pinnate

Method - 1:
  • Clean and cut the onion or shallots.
  • Grind along with red chilli and salt, to a fine paste.
  • Pour coconut oil and use.
  • Or season with mustard seeds and curry leaves.
Method - 2:
  • On a tava, add 1 tea spoon oil, add sliced onion or shallots, red chillies and saute for 2-3 minutes.
  • Allow it to cool.
  • Add Salt
  • Proceed as for the 1st Method.
 Ingredients to make PODI :

Boiled Rice             1 Cup
Toor Dal                  1/2 Cup
Urud Dal                 1/2 Cup
Chana Dal               2 Table spoon
Red Chilli                10 - 12 Nos. (or as required)
Black Pepper           2 Tea spoon
Asafoetida              1 Tea spoon
Cumin Seeds           1 Tea spoon
Sesame Seeds         1 Tea spoon
Salt                         To taste

Method : 
  • Dry roast red chillies, till crispy.  Add rice, chana dal and fry.
  • Add pepper, toor dal, urud dal and stir continuously and cook in a slow flame till they got golden brown.
  • Add asafoetida, cumin seeds, sesame seeds and salt.
  • Mix well and remove from fire, but continue stir.
  • Allow to cool.
  • Grind to make a fine or little coarse powder.
  • Keep it in an air tight bottle or box.
      (or use the  Ready to use Idly Dosa Podi)

How to use :  With Idly or Dosa, take a spoon of podi in a plate, dig a well at the center, add sesame oil, mix well and use.
