Healthy Dinner Series - Wheat Congee or Kanji

Ingredients :

Broken Wheat
½ cup
Coconut Milk
¼ cup
Salt
As required
Water
2 cups






Method :

-         Boil water and cook the wheat.
-         When it is cooked well, remove from fire.
-         Add coconut milk, salt and use along with

Tamarind Leaf Chutney  (the recipe soon !)

MURINGA ILA / DRUMSTICK LEAF SOUP

Ingredients :

Drumstick Leaves
1 Cup
Onion
½ of a medium one
Ginger
½“ Cube
Garlic
4 Flakes
Green Gram – Split
4 Table Spoon
Raw Rice
4 Table Spoon
Black Pepper
4 Tea Spoon
Salt
As required



Method :

  •  Separate the drumstick leaves from the stem. Wash and keep aside.
  •  Slice the onion and ginger.
  • Crush the black pepper.
  •  In a steamer, keep the drumstick leaves and onion. Steam for 5 minutes.
  •  Dry fry the rice.
  • Mix ginger, garlic, green gram, rice, crushed black pepper, steamed drumstick leaves and onion and pressure cook for up to 4 whistles.
  • When it is cool, smash well with a potato smasher or with a ladle.
  • Strain and discard the waste.
  • Add salt and black pepper powder to the soup and use.

An Easy Idli without Rice and Dal !

Idli is savory cake of South India that is most popular throughout the southern part of India including Tamilnadu, Pondicherry, Kerala, Andhrapradesh and neighbouring countries like Srilanka. The cakes are usually two to three inches in diameter and are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body. (wikipedia)


Normally, we'll make the idli with Rice & Urud Dal batter.  But, today, here we are going to present an easy Idli without rice and dal, with very less ingredients and time. 

More useful for the bachelors as well as for the working women.

Then why you are wasting time ?  Try now itself.  You can learn a new recipe as well as have a nice breakfast or dinner.


Ingredients :

Rava (Semolina)
1 Cup
Fresh Laban/Buttermilk
1 Cup
Salt
As required

Method :

-         Mix laban/buttermilk with rava and keep for ½ an hour.
-         Afterwards, use the idly maker to make the idly as usual.
-         Use with coconut chutney, coriander leaf chutney or Podi

For the Diabetic patients :  Replace the Rava/Semolina with Wheat Rava.  
                                         Use fine rava and the procedure is same.

Prawns - Drumstick - Mango Curry



Malabar region is an area of southern India lying between the Western Ghats and the Arabian Sea. The name is thought to be derived from the Malayalam word Mala (hill) and puram (region) derived or westernised into bar. This part of India was a part of the British East India Company-controlled State, when it was designated as Malabar District. It included the northern half of the state of Kerala and some coastal regions of present day Karnataka.  Kozhikode is considered as the capital of Malabar. The region is blessed with large availability of Fresh Prawns, Shrimp, Crab, Mussels e.t.c. There are innumerable variety of dishes main course and snacks made by the people in this region. For this week end, here I am presenting a traditional dish from that region - Malabar/Kozhikkode.

Chemmeen – Muringakka – Manga Curry
(Prawns/Shrimp – Drumstick – Mango Curry)

Ingredients :
Chemmeen/Prawn
½ Kg.
Drumstick
2 Nos.
Raw Mango
1 small
Shallots
125 grams
Ginger Garlic Paste
20 grams
Coconut
100 grams
Chili powder
3 Table spoon
Fenugreek
½  Tea spoon
Coconut Oil
3 Table spoon
Salt
To taste
Curry Leaves
As required


Method :

  • ·        Clean prawn, wash several times in running water, keep aside.
  • ·        Peel the shallots and make into 3 portions.
  • ·        Cut drumstick to 2” length pieces and mango to 2” cubes.
  • ·        In a pan, heat 1 ½ table spoon oil, saute shallots (2 portions),
         green chili, ginger-garlic paste.  When the shallots becomes soft
         add 1 cup of water and boil.  While boiling, add turmeric powder,
         chili powder and salt.
  • ·        Then add, prawn and drumstick.  Cook well.
  • ·        Add mango. (Don’t cook the mango more)
  • ·        Grind coconut and ½ of the remaining 1 portion shallot, to a
         fine paste and add to the curry and just heat for 3-4 minutes
         (If you want the gravy to use with rice, depends upon the required

         thick, you can add little more water while grinding).
  • ·        Chop finely, the remaining shallots.
  • ·        Season the curry with shallots, fenugreek and curry leaves.
·        Use with Rice or Chappathi.
