Muringakka – Chakkakuru Pulinkary

One another traditional and delicious curry of Kerala.  
Easy to make.  More benefits.

Ingredients :

Drumstick
2 Nos.
Toor Dal – Split Gram
100 Gr.
Jackfruit Seed
100 Gr.
Chili Powder
2 Table Spoon
Tamarind Extract
From a lemon sized
Coconut Oil
1 Table Spoon
Curry Leaves
As required
Salt
As required




Method :

v    Break the jack fruit seed with a stone or hammer, remove the outer       skin.

v  Cut the drumstick into 2” long pieces.

v  Pressure cook the jack fruit seed and gram with sufficient water.

v  Transfer the contents from the pressure cooker to another vessel
add the drumstick and cook for few more minutes.

v  Add the tamarind extract, chili powder and salt. Bring to boil.

v  Remove from fire and add the coconut oil. (No seasoning.  Use 
raw coconut oil, like, avial, olan, stew etc.)

v  Add the curry leaves and close and keep for some times to get the full fragrance of coconut oil and curry leaves.

MURINGA ILA MULAKOOSHYAM

DRUMSTICK LEAF-SPLIT GRAM CURRY

Mulakooshyam is a traditional curry of some parts of Kerala. 
Few days before, we posted one in this category. 
(Chakkakuru-Kumbalanga Mulakooshyam).

Today, we are presenting another healthy one.  

After knowing the health benefits of Drumstick Leaf, 
you will also agree with us, it is really healthy.

Ingredients :

Drumstick Leaves
2 Cups
Toor Dal (Split Gram)
1 Cup
Coconut
½ Portion
Garlic
Whole Red Chili
4 Flakes
2 Nos.
Cumin Seeds
1 Tea Spoon
Mustard
1 Tea Spoon
Coconut Oil
1 Table Spoon
Salt
To taste





Method :

v  Separate, clean and wash the drumstick leaves.  Keep aside.
v  Wash the toor dal(split gram), and pressure cook up to 5 whistles.
v  Grind the coconut, red chili, garlic and cumin seeds to a fine paste and add to the cooked dal along with drumstick leaves and cook for 5-10 minutes, with lid closed.
v  Remove from fire and season it with mustard seeds.

Chakkakkuru – Kumbalanga Mulakooshyam

Jackfruit Seed – Ash Gourd Mulakooshyam

Several types of Mulakooshyams (a popular curry of Palakkad) are there.
Some with common and some with seasonal items. 

Here, today we are presenting a seasonal one.
(In coming days, you can expect more in this category).

Ingredients :

Chakkakkuru/Jack fruit Seed
¼ Kg.
Kumbalanga/Ash Gourd
50 gm.
Toor Dal
100 gm.
Coconut
½ portion
Chilli Powder
2 tab. sp.
Turmeric Powder
½ tea sp.
Cumin Seeds
1 tea sp.
Salt
To taste
Coconut Oil
1 tab. sp.
Mustard Seeds
1 tea sp.
Curry leaves
1 spring
Whole red chili
2 nos.


































Method :

·         Break the jackfruit seed with a stone/hammer and remove the
upper cover (don’t make to very small pieces).
·         Cut the ash gourd to 1” cubes.
·         Cook toor dal.
·         Combine, jackfruit seed, ash gourd, turmeric powder, salt and
cook well.
·         Add the cooked toor dal and keep aside.
·         In between, grind the coconut, cumin seeds, chilli powder into a
smooth paste.
·         Add this masala to the cooked jackfruit seed, ash gourd, toor dal mixture. Boil for few more minutes, until the curry becomes thick.
·         Season with mustard seeds and broken whole red chilies.
·         Put the curry leaves on top and close the vessel to get the whole fragrance of mustard and curry leaves.
·         You can use with the rice or chappathi.

Varutharacha Masala Curry (Fried Masala Vegetable Curry)

Another curry, easy to make, with less ingredients .......

We can use this curry for breakfast/dinner along with Idly, Dosa, Chappathi, Aapam, Puttu etc. or for lunch with plain basmati rice.

Here, we are presenting with Idly (use our ready to use Idly / Dosa Batter) as a Healthy Breakfast.

Ingredients :

1.
Potato                    ½  Kg.
Onion                     2 Nos.
Green Chilli            4 Nos.
Ginger                   1 Medium pc.
Garlic                    4-5 pods.

2.
Coconut Oil            2 Table Spoon

3.
Coconut                 ½ Cup
Red Chilli               8 – 10 Nos.
Coriander Seeds     30  Gr.
Onion or
Shallots                  ½ or 10 Nos.
Curry Leaves          1 Spring       
Garam Masala         2 Tea Spoon

4.
Coconut Oil            2 Table Spoon
Mustard                  2 Tea Spoon
Salt                       As required
Curry Leaves          As required

Method :

-          Remove the skin and cut the potatoes to 1” cubes.
-          Thinly cut the onion, length wise.
-          Slit the green chillies.
-          Chop the ginger and garlic.
-          Combine, all the above ingredients, add water and cook.
-          In a pan, heat coconut oil, add the set 3 ingredients and
 fry until it becomes golden brown.  Let it cool and grind
 and make to a smooth paste.
-          Add the ground masala to the cooked vegetables. Add salt.
-          Cook in a low flame, until the curry becomes thick.
-          Season the curry with mustard seeds and curry leaves.

Onam Recipe 7



Kurukku Kaalan

Ingredients :

1.
Raw Plantain 1 No.
Elephant Foot Yam 100 g.

2.
Turmeric Powder 1 tea spoon
Black Pepper Powder 1 tea spoon
Salt As required

3.
Yoghurt 1 Litre

4.
Coconut 1 ½ No.
Green Chilli 5 Nos.
Cumin Seeds 1 tea spoon
5.
Coconut Oil 2 Table spoon

6.
Mustard Seeds 1 Tea spoon
Red Chilli 4 Nos.

7.
Fenugreek Seeds ½ Tea spoon







Method :

  -  Remove the skin of the plantain and cut into 1" cube.
  -  Clean and cut the yam also into 1" cube.
  -  Combine plantain, yam and add the 2nd set and cook.
  -  Grind the 4th set together to a fine paste.
  -  When vegetables are cooked well, 
     add the yoghurt and boil.
  -  When the gravy becomes thick,
     add the ground coconut paste,
     mix well and remove from the fire.
  -  Season with the mustard seeds and red chilli
     and add to the curry.
  -  At last,sprinkle the fried & powdered fenugreek 
     and mix well.
  -  Serve.
